For the shrub: over medium heat, add 1 cup simple syrup (I made this with Swerve zero calorie sweetener) and 1 cup of chopped raspberries. Stir and cook until the water is the same colour as the fruit, which should look less vibrant. Add 1 cup of vinegar (I used apple cider vinegar but you can also use champagne or coconut vinegar). Stir for a few seconds, then turn off heat, fine strain and pour the shrub into a jar and store in the fridge .

For the cocktail: shake 2 oz gin (I used Blinking Owl gin) with 2 oz shrub mixture and a sprig of mint. Pour over ice, top with sparkling water or club soda (I used Topo Chico) and garnish with mint 🌱
